Looking for a tomato pie recipe, pls -

Looking for a tomato pie recipe, pls

I used to have one that I made, but I cannot find it. And I am craving it.

It was a one crust pastry, it called for tomatoes (set out in a drainer or paper towels for some time to drain the moisture) and it had a mayo topping, perhaps with parmesan cheese in it.

Does anyone have that?

Are you talking about a tomato pie made like quiche, with eggs, milk or cream, etc. in addition to the cheese? I've had something like that, but I don't remember a mayo topping.

I don't really have a 'recipe' perse. But here's how I do make mine... I will call my aunt that does, however, and get it from her and share soon!

Tomato Pie

1) Brown crust (I use Pillsbury.. they make delicious crusts!)

2) Slice several large ripe tomatos and drain the juice and pat dry.

3) Mix approx 1/2 mayo with approx 2 T grated parmesan cheese

4) Grate 1 cup mozzarella cheese

5) Layer these ingredients in the browned crust, be generous with the mozzarella (ie: grate more if necessary). Salt and pepper between layers.

6) Make sure the top layer is the monzzarella cheese. You should have only 2 or three layers of tomatos.

7) Place the oven preheated to 375 F and cook til top layer is lightly browned.

Enjoy...

I'll call my aunt and get the 'real recipe' from her as soon as possible... (since this is from memory)

I have never even heard of this but now my mouth is watering. A lady from work grows tomatoes and she gave me some not too long ago, they were so good. I can see this recipe calls for really good home grown tomatoes, huge red ripe big ones. I am looking forward to trying it. Geez I'm getting hungry.

Another Great Tomato Tart!

1/2 cu plus tbsp of ricotta cheese
1/4 cu of fresh basil, minced
2 eggs beaten
4 oz of mozzarella cheese, cubed
1/2 cu (2 oz) grated parmesan cheese
salt & pepper to taste
2 to 3 red, yellow or green tomatoes, sliced
1 (9 inch) pie shell, partially baked.
2 tbsp of grated parmesan cheese

Combine the ricotta cheese & basil in a mixing bowl. Add the eggs, mozzarella cheese,1/2 cup parmesan cheese, salt & pepper, beat well.
Layer the tomatoes in the pie shell, reserving some of the tomato slices for the top. Spoon the cheese mixture over the tomatoes. Top with the reserved tomato slices. Bake at 350 degrees for 40 to 50 minutes or until brown. Sprinkle with 2 tablespoons Parmesan cheese.
Serves 6

This Paula Deen's recipe from Food Network. I saw the show when she made this, and it looked wonderful.

Paula Deen's Tomato Pie

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

Cucumber Buttermilk Soup & Italian Ricotta and Cherry Tomato Pie(makes 6 servings)

2 medium cucumbers, about 1 pound (480 g) peeled
2 scallions, white part only, chopped
2 cups (472 ml) low-fat buttermilk
1 3/4 cups (472 ml) canned low-fat, low-sodium chicken broth
1/4 teaspoon (1.25 ml) salt (optional)
freshly ground pepper to taste
1 tablespoon (15 ml) fresh lemon juice
chopped fresh mint (optional)
paper-thin slices of unpeeled cucumber for garnish
grated lemon zest for garnish.


1. Cut peeled cucumbers in half lengthwise. Scoop our and discard the seeds. Coarsely grate the cucumber.
2. In a large bowl, combine the cucumber, scallion, buttermilk, chicken stock, salt (if using), pepper, and lemon juice. Mix well. Cover and refrigerate for several hours until well chilled.
3. To serve, stir the soup and ladle into small bowls or cups. Sprinkle with chopped mint (if using) and garnish with cucumber slices and lemon zest.

I made a tomato pie last night and it was really delicious! I have a ton of tomatoes in the garden so I had to do something with them.

I used the Paula Dean recipe with a few changes: reduced the amount of cheese and mayo to 1/2 C. of each and substituted parm for the cheddar. I also sautéed a sweet onion in place of the green onion.

Savannah, I forgot to add that I blind baked the crust for about 15 min. I was afraid with all the liquid in the tomatoes that it would be soggy if I didn't. Happy baking!

Well after more than a full year, I'm pleased to say I FINALLY made this recipe, this past Friday.

It is one of the best recipes I have EVER tried, and I'm in no way a vegetarian! Laughing Tastes fabulous leftover as well.

Be SURE that you drain the tomato slices very well before making the pie. I sliced them and laid them on several thicknesses of paper towels first, for at least 20 minutes, then turned them over....pressed another few paper towels on top of them.

And I used just slightly more mayo and Parm cheese than the recipe called for. And lots of mozarella.

This is absolutely DELISH! Very Happy

That's good to hear SS. Just today after shopping at Publix where even low-fat burger was $3.99/lb. I came home and told my husband we were going to have to start eating baked potatoes for dinner.

This tomato pie might be just the ticket to get us started down that road. LOL
