Amazing Gingerbread Cake -

Amazing Gingerbread Cake

I have looked for this recipe for years, its from the old Time Life Cooking of the world series, from the 60's. Tried many others, but none compare to this. My mother finally found her copy in an old box and called with it.

GINGERBREAD CAKE
1 tbs softened butter (grease pan with it)

2 1/2 cups of flour
1 1/2 cups of dark brown sugar
1 tablespoon of ground ginger
1 tablespoon of ground cinnamon
1 teaspoon of baking soda
1/4 teaspoon of salt


1 1/2 sticks of butter
4 tablespoons of dark molasses
4 tablespoons of corn syrup (or golden syrup if you have it)


2 eggs

Sift all the orange ingredients together in a bowl, set aside
Melt all the Blue ingredients simmer until butter is melted, stirring

Preheat oven to 350 degrees

Pour the melted blue ingredients in a thin stream over flour mixture stirring constantly. When smooth, add the eggs 1 by 1 stirring after each addition.

Put into 7 x 12 cake pan and bake for 35-40 mnutes until tester comes out clean (like a knife).

I am making the 3rd batch since I posted this. omg when Kay and her daughter were here, and we all had half a pan each in the end.

If you guys like gingerbread cake try it!

I'm not crazy about gingerbread, VC, but it sounds like a good recipe. I don't like molasses much, but I did find a recipe this year for a Dijon mustard/molasses glaze for my turkey, and it turned out pretty good.

For those who need to look locally for an alternmitive to Golden Syrop, it is pure cane sugar, good hunting

corn syrup works fine though. For the molasses SS, with the spices etc, it really contributes more to color and a little depth of taste but you probably would never know unless you made it that it was in there.

VC, I am making this as we speak in 5 mini loaves. Hope it comes out just as well. I also did not have corn syrup, so used reallll maple syrup instead. 35 minutes to go!

let me know how it comes out! Ihave cooked it at midnight before and i always forget it and the bottom gets burned lol
