Broccoli Cornbread
BROCCOLI CORNBREAD
Ingredients: 1 - 6oz pkg frozen broccoli pieces, thawed and drained]
Sometimes I just throw it in the skillet 1/2 thawed.
2 boxes Jiffy cornbread mix
12 oz cottage cheese
4 eggs, beaten
1 chopped onion (I use frozen chopped onions)
2 sticks butter
Non-stick spray. I use butter flavored
Method: Saute butter, broccoli, onion
In separate bowl, mix together cornbread mix, eggs & cottage cheese.
Then, combine all. Spread on large greased cookie sheet or
rectangular cake pan or two small cookie sheets.
Bake @ preheated 350 for 30 minutes - usually a little longer. Check it.
Size & depth of pan determines texture and taste. It's all good!
Freezes really well.

Linny - can you give some idea of what the texture should be like? I know you said it will vary, depending on the method used to bake the bread, but I'm not particularly cornbread-savvy and am not sure how to tell if it's done. Will it be fairly dry, like plain-old-run-of-the-mill cornbread is? Or will it be moist because of the brocolli? Thanks! It sounds delicious.

It's a bit more moist than plain cornbread, but not soggy -- It's done when knife in center comes out clean. Should be lightly browned all over.
Double the recipe and put it in a rectangular cake pan -- thicker end product. Same test for doneness. Easy, fast and wonderful.
Cool, cut into small squares. Freezes really well.

Thanks, Linny - I can't wait to try it. I love cornbread and I love brocolli; can't miss with this (plus it's quick!)
