SPLIT from HE (Chili recipes & "discussion")
It looks like the chili needed stirring again. LOL.

Are you really? LOL. O/T N2K and I were sharing chili memories last night which prompted my response, but I love chili. I am very fussy about what goes on my chili. I love diced purple onion and grated cheddar cheese and lots of it on the top of my chili bowl. I used to drink beer with it, but now I prefer red wine with it. What toppings do you like?

YIF, to continue an "old topic", I'm a cheddar cheese girl myself. You have to have cheddar with chili. Something my kids came up with and we enjoy is rice with chili. A bed of rice and then chili, similar to red beans and rice. It's great with teen boys because rice is cheap and it streches the chili.

From my son, now an adult and a chef but "invented" when he
was about 5 years old:
Chopped Dill Pickles, cold and crunchy on top of your chili.
Mmmmmmm Mmmmmm The cold and crunch is awesome with the
spicy hot taste and we just love the combination of those two flavours

My hubby eats chili with a ring of rice around it. He doesn't understand why I don't want any rice but I prefer it on its own with the toppings. He eats on a plate with a fork and I like mine in a bowl with a spoon. LOL.
SS, I never tried sour cream on it, but I will give it a try.

I (we) like cheese in chili, too. I hadn't thought of this in years, but when I saw the comments about rice, I remembered that when I was a kid, we would put small shell or elbow macaroni in our chili; it was very good, too. I'll have to try it again. Rice sounds interesting - I enjoy rice with anything.

2 cups of water
1 cup rice
a little bit of chopped up raw bacon to taste
boil a bit to cook bacon through and then add rice and cook as usual.
3 eggs beaten.
Pour the egg mixture over the rice and mix thoroughly.

I like mine with burnt pork chops fried in onions until they are blackened almost and use that for gravy and for Paul I fix catfish and throw a little cajun seasoning in his rice. Darn non-meat eaters.

Serving Size : 8
Amount Measure Ingredient -- Preparation Method

2 Tablespoons Peanut oil
1 Tablespoon Ground pork, lean
1 Pound Ground beef, lean
4 Onion -- chopped
6 Garlic clove -- chopped fine
1 Tablespoon Cumin seeds, whole
4 Tablespoons Chili powder, hot
3 Bay leaf -- whole
2 Teaspoons Cinnamon
2 Teaspoons Allspice
2 Teaspoons Tabasco
4 Tablespoons Cocoa powder
2 Tablespoons Worcestershire sauce
4 Tablespoons White vinegar
1 Can Pureed tomatoes, 28-ounces
1 Tablespoon Oregano
Salt
Heat a 12-quart heavy stockpot and add the oil. Saute the pork, beef,
onions, garlic, cumin seeds, chili powder and bay leaves until the
meat is barely browned and the onions clear. Drain the fat and
discard. Add the remaining ingredients and bring to a simmer. Cook,
covered, for 1 1/2 hours. You may need to add water to the dish as it
cooks. The additional condiments that you may want are cooked
spaghetti, grated Cheddar cheese and chopped onions.
