Hot Hummus Salad

Thanks for the link to the superb asian recipe website link, VC. Here is an interesting middle eastern dish:

Hot Hummus Salad – makes 4 servings

1 red bell pepper, chopped
½ onion, chopped
1 tablespoon minced or pressed garlic
1 teaspoon olive or salad oil
1 pound ground beef or turkey or flavored soy ( tofu ) for vegans
½ cup pitted calamata olives, chopped
½ cup minced parsley
1 teaspoon oregano
2 tablespoons lemon pepper
2 cups hummus
½ cup feta cheese
¾ lb ( approx 2 ) firm ripe chopped tomatoes
½ cup chopped cucumber
¼ cup chopped green onions

Fry over high heat, bell peppers, onion, garlic and oil, stirring often until vegetables are browned, about 10 minutes. Add meat or tofu, stir, until crumbled and browned, about 15 minutes. Add olives, parsley, oregano, lemon pepper, and hummus. Stir until mixture is hot, about 2-3 minutes longer.

Spoon mixture over broad noodles, baked potatoe, rice or bread. Spoon chopped tomatoes, cucumber and green onions over mixture. Sprinkle crumbled feta cheese over all. Flavor with several tablespoons of lime juice and salt to taste.

Hummus preparation:

1 can ( 15 oz. ) garbanzos
2 tablespoons vinegar
¼ cup tahine (sesame paste ), or ¼ cup toasted sesame seeds and 2 tablespoons olive oil.
3 tablespoon lemon juice
1 large garlic clove, minced
¼ teaspoon ground dill
¼ teaspoon each salt and pepper

Drain garbanzos, reserving liquid. Blend garbanzos in food processor with tahine, lemon juice, garlic, cumin and ¼ cup garbanzo liquid, until mixture is smooth and consistency of heavy batter. Hummus not used in recipe above can be used as dip for carrots, celery or chips.

Every ingredient in this recipe is a favorite and I am going to make it this week end. Sounds wonderful! Which is best, really? Ground beef, turkey or tofu? I'm going to go for the turkey mainly because of diet restrictions for some.

Ground turkey is what we always use. Since this is a middle eastern dish, they sometimes put the ingredients into a “pita pocket”, but I like to eat it with a fork/spoon as an open face sandwich on whole wheat bread, after sprinkling the bread with lime juice.
