Soft Caramels

With the holiday season here, this recipe is great for at home, to take to casual work group gatherings, give as gifts - whatever - everyone loves them! Very, very easy - just allow plenty of time for the prep and wrapping of the individual pieces. By the way, you will need a candy thermometer. Happy melt-in-your-mouth eating!!

Soft Caramels

1 cup Sugar
1 cup Dark Karo Syrup
1 cup Butter
1 tsp. Vanilla
1 can Sweetened, condensed milk

1. Melt butter, add Karo and sugar; mix well. Bring to boil over medium heat, stirring constantly. Reduce heat to low (slow boil) and boil 4 minutes without stirring.
2. Remove from heat and add sweetened, condensed milk.
3. Return to low heat and insert candy thermometer. Stir constantly until comes to slow boil. Boil until candy thermometer Reads 238* (soft ball stage - ~ 30 min.) Stir often so it doesn’t scorch on bottom. Let boil 3 min. longer – set timer.
4. Remove from heat and add vanilla.
5. Butter 8” x 8” baking pan.
6. Let the caramel mixture sit in the pan it cooked in for ~ 10 minutes, just to cool a bit.
7. Wrap each piece in waxed paper.
8. Pour caramel mixture in pan and cool completely. Speed up cooling by putting in the refrigerator for about ˝ hour. Turn out onto a cutting board and cut into 1” pieces. They may stick a little in the middle; just pull free and reshape on the cutting board, it’s very pliable. A pizza cutting wheel used to cut 8 strips in each direction makes the cutting process very easy.

Makes 64 pieces.

These are also good when dipped in a good-quality milk- or dark-chocolate. Just put a toothpick into the caramel and dip into melted chocolate, spin gently to release excess chocolate, and voila -
