Reuben Casserole

Sounds YUMMY! I hope to try this over the weekend.

Reuben Casserole

1 bag sauerkraut, drained and rinsed and dry
1 lb of good deli corned beef, chipped
1 lb of good swiss cheese, sliced fairly thick
thousand island dressing (amount to your liking)
3/4 loaf of day old rye bread, cut into fairly large cubes
1/4 cup melted butter (no substitutes)

In a 13 x 9 inch baking pan sprayed with food release (ie Pam), layer first the sauerkraut, corned beef, thousand island dressing (try substituting a spicy brown mustard for the dressing), swiss cheese.
Toss the cubed bread with the butter then place on top of the swiss cheese.
Bake at 350 degrees for 30 minutes.

It does sound good. Thanks for the suggestion on the mustard as I don't care for Thousand Island dressing.

I love sauerkraut. I eat it straight out of the jar sometimes. I like it with ketchup on it too. Of course, I like just about anything with ketchup. I even eat ketchup sandwiches. I like anything made with tomatoes in any way, shape or form.

Actually, no, it sucked. :D My son and I both didn't particularly care for it. Odd, because it got some RAVE reviews on the site where I first saw it posted. :(

The Thousand Island dressing would have ruined it for me.

I have a recipe for Reuben Pie that sounds good although I've never made it and can't vouch for it.

4-6 slices rye bread
1/2 lb. thinly sliced corned beef
1 lb. sauerkraut, drained
1 c. shredded swiss cheese
2 eggs
1 scant T. mustard
3/4 c. milk
1/4 t. salt

Grease a 9x13 pan. Layer bread, beef, kraut and cheese. Mix egg with milk, mustard and salt. Pour over all. Bake at 325 for 40 minutes.
